A person who processes game meat for human consumption must be accredited under the Primary Produce (Food Safety Schemes) Act 2004 and the Primary Produce (Food Safety Schemes) (Meat Industry) Regulations 2006.
This includes the processing of game in the field as well as in the processing plant.
Game means any animal or bird that has lived in a wild state and not under any artificial confinement, that has been killed in the field.
A licence defines the need to obtain recognition / certification and registration to undertake a certain business activity.
Operation must comply with the Primary Produce (Food Safety Schemes) Act 2004 and the Primary Produce (Food Safety Schemes) (Meat Industry) Regulations 2006. Operation must also comply with the Australian Standard for the Hygienic Production and Transportation of Meat and Meat Products for Human Consumption and the Australian Standard for Hygienic Production of Game Meat for Human Consumption.
