Australian Standard AS 5011 Hygienic Production of Natural Casings for Human Consumption - Western Australia

Service summary

You will be required to comply with this standard if you operate an abattoir and you intend to produce natural casings. Natural casings are sausage skins derived from the intestines of animals.

This standard contains the minimum requirements for the preparation and processing of natural casings derived from the intestines of sheep, pigs, goats and cattle. Please consult the Contact Officer for more information and to ascertain the level of compliance that may be required.
