Food - Consumer Quality and Sensory Evaluation - Queensland


The sensory and consumer science team conduct research projects that support the food industries of Queensland to maintain profitability and sustainability. Research services are available to food producers, manufacturers, distributors, marketers, food service and end users through collaborative projects.

With a particular focus on value addition and tropical / subtropical products, the group maintains a diverse research portfolio of science skills including:

  • consumer taste testing
  • trained panel sensory evaluation
  • consumer preference mapping
  • qualitative focus groups
  • quantitative consumer research
  • consumer psychology, including the evaluation of buyer and consumer perceptions, attitudes and behaviour
  • supply chain and consumer communication strategy
  • food texture measurement
  • compositional flavour analysis.

Project examples include:

  • measuring consumer acceptability of new apple cultivars
  • evaluating consumer quality of fresh-cut products undergoing shelf-life challenge tests
  • understanding the psychological drivers of consumer purchase decisions for fresh vegetables
  • developing flavour vocabulary for describing unique native Australian plant foods
  • communicating new industry protocols to the seafood supply chain
  • surveying and analyzing Japanese and Chinese consumers attitudes toward Australian mangoes
  • analysing barramundi samples for key flavour compounds
  • consumer devaluation of banana blemish
  • investigation of the market viability of alternative banana varieties
  • market testing of innovative fresh-cut pineapple products.
