Australian Standard AS 5011:2001 Hygienic Production of Natural Casing for Human Consumption - Victoria


You will be required to comply with this standard if you operate a meat processing facility and produce natural casings from the intestines of sheep, pig, goats and cattle. This standard applies to the hygienic production of natural casings for human consumption. It contains the minimum requirements for the hygienic preparation and processing of casings derived from the intestines of sheep, pigs, goats and cattle.
