Victorian Standard for Hygienic Production of Meat at Retail Premises - Victoria


You will be required to comply with this standard if you intend to operate a facility retailing meat and meat products for human consumption in Victoria. This standard provides a framework for the safe production of meat with the outcomes of microbiological safety and the prevention of physical and chemical contamination.

Meat has the meaning of any edible part of any slaughtered animal. Meat products are manufactured meat such as smallgoods.
