Description

You will be required to comply with this standard if you intend to operate a game carcass field depot or wild game meat processing establishment that processes meat for human consumption. Game includes the following animals in their wild state:

  • bird
  • buffalo
  • camel
  • deer
  • donkey
  • horse
  • hare
  • goat
  • kangaroo
  • pig
  • rabbit
  • possum
  • wallaby.

This standard sets out requirements for the production and hygiene quality control of game meat processed for human consumption at all registered establishments in Australia.

Compliance with this standard ensures that all game meat is processed in a safe and hygienic manner.
